Barbeque Chicken Pizza

Happy Labor Day! Hope you've had a lovely weekend, enjoyed your time off, and enjoyed some great food. If you bbequed, chances are you grilled chicken, right? Here’s a delicious and extremely fast dinner idea for tomorrow inspired by leftovers from today :)
I came up with this recipe a few years back when I visited with my friends from Springer Mountain Farms Chicken at the National BBQ Cup. They sent me home with a big ole to-go box of chicken! And I took those perfectly grilled chicken thighs, chopped them up, pulled out my barbeque pizza recipe from my 1st book, added in some leftover red onion that I had in the fridge, some more bbque sauce, a few shakes of red pepper flakes and voila! Fresh, hot pizza-no need for delivery- and darn good.

So put it on a pizza stone and grill it or bake it. Either way, it only takes 7-12 minutes for this baby to crisp up, all that yummy cheese to melt, and the bbque sauce to start bubblin’!

Ingredients:
3 averaged-sized chicken breasts (or leftover cooked chicken, shredded (about 4 to 4 1/2 total cups)
Splash of olive oil
Garlic powder
Freshly ground black pepper and salt
1 thin flat prepared pizza crust
1 jar pizza sauce
1 1/4 cups barbeque sauce
Sprinkling of red pepper flakes to taste
Sliced red onions to taste
Shredded mozzarella cheese to taste
Shredded cheddar cheese to taste
Instructions:
Place chicken breasts in a lightly olive oil-greased slow cooker set on high. Cover each breast with about a 1/4 cup of barbecue sauce and sprinkle each with salt, pepper, and garlic powder. Put the lid on and cook for about 1 1/2 or two hours or until chicken is done. (If using leftover cooked shredded chicken, place chicken in a medium bowl and cover with 1 cup barbeque sauce. Stir to combine and refrigerate.)
While chicken is cooking (or marinating in the fridge), combine pizza sauce and remaining barbecue sauce in a small bowl. Sprinkle in desired amount of red pepper flakes, stir, and set aside.
When chicken is done, use two forks to shred the breast into pieces in the slow cooker and stir to mix the cooked sauce in with the chicken.
Preheat oven according to pizza crust directions.
Spread combined sauces over prepared pizza crust. Sprinkle a generous amount of equal parts mozzarella and cheddar cheese over the sauce and top with slices of red onion. Evenly top pizza with shredded chicken from slow cooker (or your fridge) and bake according to crust directions.
